If you’re going on holiday to a villa this summer and want to impress your travel companions with something exotic or if you want to bring a bit of your summer holiday into your home, then what better way than to do it with food?

When you think of food that reminds you of summer we’re certain Spanish paella springs to mind! We’ve put together a traditional but spiced up version of the old classic for you to enjoy all summer long (and there might even be some left over for lunch the next day!)

Start by getting your ingredients together and you’ll also need a large wok/paella pan, a wooden spoon and a good set of knives.
300g Paella rice
2 chicken thighs
10 king prawns
300g mussels

150g squid
Chorizo sausage
1 red pepper
1 green pepper
1 inch red chilli
100g frozen peas
1 onion
3 cloves garlic
1 handful of flat leaf parsley
750ml chicken stock
1 can tinned, chopped tomatoes
Salt and pepper
1 lemon or lime

Start by heating up a tablespoon of oil in your pan. Chop the chicken thighs into whatever size you like and add to the heat until just cooked through. Chop the onion, garlic, and peppers and add to the pan along with the peas. Fry gently for about 10 minutes. Add the rice, stock and tinned tomatoes then season with salt and pepper. Make sure all the rice is covered and continue to stir every few minutes. After 15 minutes the rice should be cooked so it’s time to add the prawns and the mussels. (You might want to add a bit more stock if the rice is looking dry) keep stirring until the prawns turn pink then add the squid and chorizo. Cook for a further 5 minutes or so then add the chilli and parsley. Serve with lemon and lime wedges and some more salt and pepper to taste.
